At the heart of our dashi is a traditional Japanese technique called the “Tebiyama” method, a centuries-old process that embodies patience, precision, and passion.
In this artisanal method, skilled craftspeople burn firewood in a deep underground kiln. Above the flames, they place wooden trays (seiro) filled with carefully prepared fish fillets, rotating and repositioning them by hand to ensure even heat and smoke exposure. This delicate balance of smoke, warmth, and time gently transforms the fillets into flavorful “katsuobushi” or dried fish flakes.
Each step is performed with care—by human hands, not machines. No shortcuts.
The result? A rich, umami-packed ingredient that can’t be replicated by mass production.
